
This is the quick dinner I was thinking about all day, and it ended up meeting all my criteria: fast, cheap and pretty delicious. I was doing the chop & go method of prep, so the measurements are guesstimates. Use your best judgment. Without further ado:
Ingredients
Enough pasta for two servings
1/4 cucumber, chopped
1/8 onion, chopped
1/4 cup olives, sliced
1/4 cup feta cheese
1 can tuna
Gazebo Room Greek Dressing & Marinade (This is the crucial ingredient. Seriously. The Greek dressing you didn't know your life was missing.)
Freshly ground black pepper to taste
Directions
- Cook and drain the pasta. (I used gemelli because that's what I had in my cupboards, and I think the texture's good for this dish.)
- MEANWHILE, chop the cucumber and onion, and slice the olives. (I didn't have olives on hand, so the dish is fine without it, but I did miss them a little bit while I was eating it.)
- When the pasta's ready, toss it with the cucumber, onion, olives, feta cheese and tuna.
- Add the Greek dressing to taste and toss some more.
- Top with freshly ground black pepper and serve. Yum.
